Barbecue Ribs

Reviewed: Jun. 17, 2007
Killer ribs! Great! Easy! (well, i asked my husband to make the sauce) - and he did it very well! The last time I made them, we were running out of chili sauce, so we substituted it with jarred spicy pasta sauce - and it worked really great too!

Peanut Butter Cup Ice Cream

Reviewed: Jun. 3, 2007
This is such a delicious, creamy ice cream! As a peanut butter lover, the pure nutty flavor is perfect (although it might overpower someone wh's not a 100% PB fan). Using 2% milk will also work for this recipe and lightens the ice cream up a bit. A definite repeat in my household!

Rempel Family Meatloaf

Quite tasty and very easy to make. The addition of a glaze for the last 15 minutes makes it more flavorful. I used 1T brown sugar, 2T ketchup and 1T Worcestershire sauce for the glaze and it was delicious!

Buttery Soft Pretzels

Reviewed: Mar. 18, 2007
Not quite like the shopping mall pretzel but still very delicious. Thanks to previous reviewers' comments, I reduced the flour to a scant more than 3 cups and it turned out yummy and not too dense. I think in the future when I make this again, I might try glazing the pretzel with some butter before topping it with coarse salt and other sesame seeds or cinnamon sugar before putting them into the oven. This is definitely a keeper!

Chicken Korma II

Reviewed: Mar. 4, 2007
This is sooo good! I altered the recipe a bit though. I used 1 tbsp of crushed garlic, 1/2 tbsp ground ginger, 4 bay leaves, 2 1/2 tsp garam masala powder, 1/4 tsp cayenne pepper, 1/2 tsp curry powder, and used coconut milk instead of heavy cream. Everything else kept the same. It's sooo yummy and tasty!

Raisin Buttermilk Coffee Cake

Reviewed: Feb. 6, 2007
So good!!! I usually dont want to try any recipes which have less than 10 reviews - but i thought - oh well - this looks like the easiest, and i have all the ingredients at hand... and my buttermilk is going to rot if I leave it one more day! And I didnt regret it, it's so moist, rich, soft! I couldnt spread the dough into 2 different layers (too thin for me) - so I just pour the whole thing in the 9x13 pan, and laid the whole brownsugar mix on top of it - creating a really nice streussel look! Anyway, I loved it - had 3 big pieces already.

Debdoozie's Blue Ribbon Chili

Reviewed: Feb. 4, 2007
I did what the others recommended. Used two 8 oz can of tomato sauce, and 15 oz of diced tomatoes. Browned the beef with onions and garlic, and put into the crock pot on low heat for around 8 hours. It is very good but still not the best. I actually added two packages of chili seasoning, but the 30% less sodium ones. Added extra 1 tbsp of cumin powder , a tsp of chili powder, and a dash of cayenne pepper.

Classic Tiramisu

Reviewed: Feb. 1, 2007
First of all I have to say that this tiramisu is very rich and creamy but overtly sweet. Next time I will cut down the sugar to 3/4 C only. Remember to use heavy whipping cream that is NOT ultra pasteurized since it will be easier to reach to desired volume. I whipped the cream to stiff peak for about 20 min or so. Bought the soft lady fingers and Belgioioso mascarpone cheese at Trader Joe's. From other reviews, I thought mascarpone cheese would be so expensive, but actually my husband and I thought it wasn't bad at all. It was less than $2.50 for each 8 oz package. Since this recipe called for 1 1/4 C, of course we both had to pick up 2 packages for total of less than $5. Oh even with the soft lady fingers, I dipped it into the room temp espresso really quick on both sides, and it didn't turn out to mush at all. Don't worry, dipping would create stronger taste than just brushing.

Pauline Werner's Beef Stew

Reviewed: Jan. 19, 2007
Looking at the recipe's shortage of salt and previous reviewers' comments, I added 3 teaspoons of instant beef bouillon and the soup's flavor turned out delicious. I liked the addition of the tomato sauce. However, this dish (I think) isn't thick enough to be considered a stew. Maybe next time I'll add some cornstarch dissolved in equal parts water towards the end. It was pretty good, but there's nothing special about it. My hubby commented about adding some spice (maybe chili powder?) for a kick. Otherwise, this is the perfect soup for bread dunking on a cold winter night.

Jean's Homemade Chicken Noodle Soup

It's really tasty!. I sauteed crushed garlic and ginger, chopped green onions with the chicken breasts. Put into the broth a sprig of thyme and rosemary, 2 bay leaves, and it came out really good!. Will make it again sometime.

Quick and Easy Alfredo Sauce

Reviewed: Jan. 18, 2007
I thought I still had cream cheese left in the fridge but instead it was the neufchatel cheese, so I halved this recipe just in case if it didn't turn out right. I was wrong!. Neufchatel cheese worked just fine and definitely put more parmesan cheese, a pinch of nutmeg, and sprinkled with some chopped parsley and basil. I served this also with steamed broccoli and mushrooms. YummY.

Simple Spinach Lasagna

Reviewed: Jan. 16, 2007
I give this a 4 star because nothing still can beat the regular meat lasagna but still for its group, this recipe is one of the best. I used 1 1/2 tsp of crushed garlic, fresh basil instead of dried, and substitute the water with spaghetti sauce. Oh, don't forget to blanch the spinach really quick in hot water and drain it before you use it in the lasagna mixture. 12 ounces of mozzarella rather than 8. It's really yummy, we love it!.

Buckeye Balls II

Reviewed: Jan. 8, 2007
I used only 3 cups of sugar like others but still it was way too sweet. Next time, I probably will only use 2 1/2 C and mix the semisweet choco chips with bittersweet ones. It's better to also just put in 1 TBSP of shortening instead of 2 TBSP per 6 ounce chocolate chips.

Chocolate Frosting I

Reviewed: Jan. 8, 2007
I used Dutch-processed cocoa instead of the normal cocoa powder and the frosting turned out to be super chocolatey, darker and delicious! I also added less sugar (2 1/2 cups) to avoid the cloying sweetness other reviewers have mentioned.

Awesome Sausage, Apple and Cranberry Stuffing

I used fresh herbs instead of dry. Stirred in 2 C of chicken broth in total and omitted the liver. Added 1/3 C of chopped pecans, and baked it 45 min covered, and 15 min uncovered. My husband said that this is one of the best stuffing he'd ever had. So Good!

Cranberry Pistachio Biscotti

Reviewed: Dec. 10, 2006
This recipe yields delicious biscotti that are a little bit denser than other biscottis. The flavor is wonderful and the combination of pistachios and dried cranberries gives it a very Christmas-y appearance. I added about a tablespoon of finely grated orange zest and drizzled melted white chocolate after they were cooled. I definitely recommend this recipe!
