Good Old Fashioned Pancakes

Reviewed: Dec. 6, 2009
I liked the pancakes, only thing is that it needs way more sugar. I must have added about 1/2 cup and it still wasn't enough. The batter is very thick, but it comes out fine..

Coconut Macaroons III

Reviewed: Dec. 6, 2009
These are delicious and so easy! I dipped the bottoms in melted dark chocolate. This recipe made 20 cookies that held their shape and were larger than golf balls. My only problem is figuring out the perfect baking time, as I live at high altitude. The coconut on the tops toasted in just 10 minutes, so I took them out but later felt that they could have used a little more time in the middle. So next time I may lower the temperature to 325 and bake for 15-18 minutes.

Used "Chili Seasoning Mix II" with this recipe. Served with " Homesteader Cornbread." Not too hot or spicy which was great for my kidlets.

Emily's Famous Chocolate Shortbread Cookies

Reviewed: Dec. 6, 2009
I was making chocolate cut out cookies for a xmas sale and tried this recipe. I followed other reviewers and substituted 1/4C flour with cocoa powder. I found the cookies not sweet at all, and rather more on the bitter side. The cookies were also very crumbly. That did not help as I had to decorate the cookies. Every little movement crumbled a few cookies and it was really frustrating to me. In the end, I tweaked the recipe by using the original amount of flour, reduced the cocoa powder by 10-15g, added a pinch of baking soda, substituted icing sugar with fine sugar and increased the amount of sugar quantity. That made the cookies more manageable and easier to handle. I made about 22 to 24 pieces of 4-inch cookies per recipe.

Chili Sauce

Reviewed: Dec. 6, 2009
Used this recipe to substitute the jar of chili sauce in "Cocktail Meatballs." Next time, I think I will add 1/4 tsp of onion powder, 1/4 tsp of garlic powder, and 1/2 tsp of chili powder as proudwifeandmommy suggested.

My husband and older daughter liked it but I and my younger daughter really weren't pleased with this recipe. I used "Chili Sauce" from AR to replace the bottled stuff. Also after tasting the final product, I added about 1/2 cup of apricot preserve to make the sauce sweeter. Served over rice.

Bee Lian's Rich Orange Cake

Reviewed: Dec. 5, 2009
Wow this came out really great. The only thing that I would change a little bit, is to add something that really concentrates the flavour, like maybe some orange marmalade instead of part of the juice, because the orange flavour didn't really come through all that much. But it was a good cake with a nice even texture and a beautiful colour.

I made this with vanilla and mango ice creams, And I have to say the vanilla was wayy better!! I rolled it out real thin, and filled it with a coconut-icing sugar mix, and it tasted amazing!! I also made some thumbprints and filled them with orange marmalade, and that was great too. everyone requested I make them again soon! thanks for a great and easy recipe!!

I found these cookies easy to make and delicious. The cranberry tartness goes wonderfully with the sweet white chocolate. The pecans add a great texture. I will definitely make again.

Lemon Garlic Tilapia

This is really simple and really easy. I eyeballed the measurements down to one serving and found that it didn't need the full 30 minutes. I also followed the advice of others and sauteed the garlic first, then mixing in the rest of the sauce ingredients.
