Southwestern Pasta Salad

Made this for our Memorial day BBQ and everyone liked it. I started out making it close to the recipe, but found it pretty bland. I changed it by using more lime juice, olive oil-just eyeballed it, a little reserved starchy pasta water, parsley instead of cilantro since I don't like it, green onion, and less cumin since one of my friends doesn't like it. I let it sit for a couple of hours and it was still a little bland and the chili powder was a little overpowering. I added more lime juice, touch more olive oil, quite a bit more salt, black pepper, hot sauce, and a sprinkle of taco seasoning since I had a packet open. It was better but still a little blander than I would prefer - but I left it that way since my friends can't all do spicy. To make it just for us in the future I'll add minced jalapeno, some cubed pepper jack cheese, more hot sauce, use less chili powder (might try a little chipotle chili powder), and cayenne pepper. It just seemed to be missing something...maybe for me it was spicy heat.

Penne Pasta with Spinach and Bacon

I tried this recipe tonight and loved it! It was super easy and very flavorful. I added some local chinese mushrooms and it was just perfect!My husband loved it!

Dee's Roast Pork for Tacos

Buffalo Chicken Dip

Yum! I layered my dip like a lot of others did. Cream cheese, Ranch dressing, chiken mixed with Franks Red Hot buffalo sauce, and then a Jack/Colby blend. Cheddar can separate and get greasy so I opted for a better melting cheese. My DH loved it and it was so simple.

Russian Black Bread

What a treat! Dark and dense, this bread is a delight.I live in rural Taiwan and finding bread that isn't sweet is really hard. I made this bread today and took it with me when I met with some friends. They loved it! Now I have to make it weekly for them. I can't get some of the ingredients so subbed cumin seeds for the caraway, skipped the fennel and used olive oil.

Very Easy Shrimp Dip

Easy and pretty tasty. I combined all the ingredients together instead of layering them and it sit in the fridge for an hour. I might add a little more spice next time...maybe a touch of horseradish. I might try this with fresh shrimp next time.

Shrimp, Leek and Spinach Risotto

This just ended up tasting very strongly of leeks and spinach and not much else. I had precooked shrimp that I added right at the end and they didn't pick up much flavor. Raw shrimp that could cook longer might be better in this.

Bill's Sausage Gravy

Risotto with Chicken and Asparagus

Yum. I added a little poultry seasoning to the chicken to add a little flavor, as chicken can get bland at times. Next time I would use 1/2 to 3/4 c wine. I think I used a bit too much. I also used one quart of chicken broth (like I always do when making risotto), adding one ladel-full at a time. Like many other people, I didn't add my asparagus until the last 10 minutes or so. This turned out really nice.

Orange Drop Cookies II

These are pretty good. Really different, I like them. Like little cakes with a sweet icing. I used an extra egg, margarine instead of shortening, a smidge less sugar than called for, a splash of orange extract to ramp up the flavor, I chilled the dough prior to baking, and only baked for 9 minutes. I had no problems with spreading. For people with questions on how fats, liquids, etc. affect cookies Allrecipes has a great resource article in Tips & Advice, "Perfect Cookies." Check out the article and you'll learn how to tweak a cookie recipe to your liking with confidence.
