Fluffy Pancakes

Make this almost everyday for breakfast. Very easy and quick to prepare. I never use milk, just water instead. I also added 2 tsp sugar to batter, sprinkles a little chopped raisins and walnuts while cooking, and eat the pancake as is, no syrup or additional butter. Using teflon pan is great because no oil is needed. And they are still fluffy pancakes. Yum!

Flax and Sunflower Seed Bread

I have made this bread many times. It is my favourite machine bread recipe. It is great freshly baked and lightly buttered, for sandwiches, with dip, and toasted. I use machine settings Basic, Medium Crust, and 1.5 lbs. I use margarine instead of butter, ground flaxseed, and all whole wheat bread flour.

Banana Coconut Loaf

Yum. I used 3/4 cup of Splenda instead of sugar and used unsweetened coconut. I found the amount of cherries a tad too sweet so I would lower the amount next time. But overall, this loaf is delicious.

Italian Spaghetti Sauce with Meatballs

Veronica's Apple Pancakes

Pretty good. I use a large Fuji apple, which yields more than one cup. Also, I substituted 1/4 cup of the AP flour with wheat germ and rolled oats, and used whole wheat flour for the rest.

Salmon with Tomatoes

I left out the dill weed because I didn't have any and the flavor was great. I made again the next day, still w/o dill weed, adding chopped red and green pepper, and sliced grilled eggplant. A complete meal at one go. Easy and delicious.

Bran Flax Muffins

The recipe is a little bland as it is, but because of its adaptability, I'm giving it 4 stars. I used oats instead of flax and more raisins instead of nuts. I used less sugar than called for, and twice the amount of cinnamon. The muffins have a great, moist texture, and needed a few more minutes to cook than stated, but overall the recipe needs just a little tweaking: more spices and/or sugar, or perhaps honey. It will be good to use oats and flax in this next time, as well as walnuts. I think the raisins should be doubled no matter what.

Raspberry Buttermilk Muffins

I made these with fresh strawberries and blueberries, and substituted 1/2 cup Splenda and 2 tsp vanilla. It would be better with real sugar. I beat the two eggs and the vanilla into the buttermilk first, and then added the buttermilk to the dry mixture. The batter is sticky but the muffins turned out fine.

Garam Masala Seared Salmon with Coconut-Curry Butter

Hmm, yummy. Despite of the alterations I made this recipe still turned out great. I used milk and the sauce was a bit runny but when drizzled on rice it was just fine. I didn't pan-fried the fish, but baked it instead. I'm going to have this dish again very soon.

Cranberry Wheat Bread

I doubled the cranberries and the spices except for the cloves. I added a 1/2 cup of walnuts because it's all I had--it was great and 1 full cup would have been perfect.

Chicken Piccata II

I butterflied and pounded the chicken before dredging it in the flour (because this meant more meat to cover, I doubled the egg mixture and flour). Also, I added minced garlic cloves to the egg mixture and the sauce, and black pepper to the sauce. I reduced the sauce a bit before adding 1 tbsp corn starch dissolved in 1 tbsp water to thicken it a bit. Capers would have been ideal, but I didn't have any, so I garnished the chicken with chopped cilantro (harmonious with the lemon flavour) and lemon.
