Peanut Butter Kiss Cookies

Outstanding! Be sure to use brown sugar & powdered sugar in addition to the white sugar, just as the first couple of reviews suggest. I was never a big fan of this cookie when I was growing up, because my family makes them with flour; but they're my boyfriend's favorite, so I gave them a try. This flour-less version is just wonderful! Nice, moist & chewy instead of dry and flavorless. They're great even if you run out of chocolate kisses (like I did!).

Roasted Sweet Potatoes & Onions

What a great recipe! I was looking for something nutritious with an autumn flavor, and this was just the ticket. A few changes I made: Like other reviewers suggested, I decreased the amount of dried thyme. I just used what was left in the shaker, probably 1/2-3/4 tsp, and it was plenty. The subtle flavor was wonderful. Also, I subbed orange juice for amaretto, because I'm on a bit of a tight budget and OJ is a more practical choice for my household. Last, I threw in some prunes (sliced in half) because I love them. They're full of iron, they add color contrast to the dish, and they're delicious!

Greek Lentil Salad

This salad was awsome!! I didn't have greek dressing so I used the oil/dressing that came with the feta. I don't know what lentils are either so I used kidney beans. This was the top recipe that came up in my feta/kidney bean search. Brilliant.

No Bake Cookies V

These turned out great and were gone in a day! Like another reviewer suggested, I used butter instead of margarine and added more oats since I used creamy peanut butter. Yum! I'll definitely make these again.

Enchilada Casserole II

Tasty and easy!! This is a great comfort-food recipe. I substituted corn tortilla chips for the tortillas, so that I ended up with a nice, mushy chilaquile-like effect. It was great topped with plain yogurt, and next time I'll add chopped jalapenos as well. Pair it with a salad or some rice, and you've got a meal :-)

Orange and Lentil Soup

I thought this soup could use a bit more flavor. It tasted alright and was certainly easy to make; it just lacked depth somehow. I might try adding more juice or maybe some chicken next time. One thing I did appreciate was that the affordable ingredients made this a nice economical recipe.

Whole Wheat Pancakes

These pancakes are really good! I didn't have any wheat germ and I wanted to use a bit more wheat flour than the recipe called for, so I ended up using 1.5 cups wheat flour with 0.5 cup all-purpose flour and omitted the wheat germ. They still cooked up nice & light. I agree with another reviewer though, that the recipe calls for too much milk. I added it gradually and ended up with .5 cup leftover milk, and quite a thin batter as it was. With the exception of the milk adjustment, I think this is a great recipe and I'm sure I'll use it again :-)

Buttermilk Cornbread Muffins

Nice texture, not too sweet or overly dry. There were equally good crumbled up in chili or broccoli-cheese soup, and eaten alone with a little honey. I'm not sure if this will become my standard cornbread recipe, but it's definitely a good one :-)

Pineapple Chicken Tenders

Great recipe! The marinade was so easy to put together, and the chicken turned out nice & tender. We used the marinating time to cook some rice & saute some vegetables, and it all made for a tasty & inexpensive dinner.

Sue's Hot Fudge Sauce

Delicious! Tastes just like the hot fudge sauce my mom makes. I halved the recipe but kept the 1/3 cup of cocoa powder. I also whisked throughout, so there was no need for a blender.

Cinnamon Syrup

Delish!!! I love that this syrup is made from ingredients that most people have readily available in their pantries. It keeps well in a sealed container, and is a much cheaper & tastier alternative to buying maple syrup, which is really expensive where I live.

Broccoli Cheese Soup VII

What a great recipe! This soup was quick & easy to make, with practically no clean-up afterwards. I used low-fat milk & reduced-fat cheese and also omitted the heavy cream, and it still turned out to be delicious and filling. I also added a few fresh mushrooms to the broccoli when it was cooking, just because i had them on hand. I served this soup as a main dish with a side of cornbread, and it made a great dinner on a chilly evening. As an added bonus, it didn't hurt my budget!

Banana Blueberry Muffins

These are great muffins!! I was so happy to find a recipe that used all wheat flour, as I had some extra whole-wheat pastry flour that I wanted to use. I added 2 egg yolks and had to use frozen blueberries because fresh ones are so expensive here; but they turned out great! Not too sweet either, just right with a nice touch of cinnamon flavor. The recipe made exactly enough for 12 regular-sized muffins. I'll definitely make these again!

Caribbean Crabmeat Salad

We think this is fab. I've used both frozen mango and canned mango (you have to be careful with canned cause it "smushes" easily) when fresh has been unavailable. If you don't like the taste of cumin (I looove it) try fresh grated ginger and/or black pepper and/or a dash of chili. I like a lot of dressing and a lot of veges in relation to pasta so I add plain yoghurt to the dressing and throw in some mizuna and extra cilantro, too.

Nutty Whole Wheat Bread

Easy and delicious. I was initially wary of the no double rising but it turned out puffy and light. It does dry out fast so best eaten on the day you make it. I have also used this as a basic recipe for a grain bread by omitting the walnuts and adding bran, oats and seeds. Easy to make buns out of it, too.

Coconut Banana Bread

It was very good but a little sweet. I cut the sugar down by about 1/4 cup give or take and upped the banana a bit (no point not using that extra 1/2 banana!). Hubby thought it was just right but the addition of white chocolate pushed it over the edge for me. Don't get me wrong, I'm still going to eat it and enjoy it, but next time I'll either leave out the choc or replace it with bitter sweet

Mexican Baked Fish

Taste- 4 stars, ease of preparation- 5 stars. I could easily guess the outcome of this recipe is based on the quality of your ingredients. To the salsa, I added extra tomato, chopped roasted peppers, olives etc. My end result was a little watery because my fish was just defrosted. Next time I will make sure my fish is dry and leave it marinating in the salsa for an hour before baking so my not-best-quality-frozen-fish can take on some more flavour. Excellent easy summer recipe served with tortillas, salad and so on. Leftovers were good with rice, too. Post note: Made it again. Put just undercooked i stock brown rice on the bottom and added kidney beans, corn and chopped tomatoes to the salsa. Cooked up beautifully and was basically a complete meal in itself although I still had avocado and tortillas on the side.

Broccoli Potato Soup

We liked this very much after I made a few minor changes based on availabiilty and personal preferences. I did half milk, half stock and then used a stick blender to partly puree - all the creaminess with not as much fat. Also subbed some of the cheddar for parmesan for the same reason. Used about a 1/2 Tbsp of pesto because didn't have fresh basil. Only made enough for 2 of us though.

Addictive Sweet Potato Burritos

Haha - with this and other yummy recipes I have weened my carnivorous husband off red meat. He wants to keep this in regular circulation. I did have a little leftover bacon in the fridge which I put in one and it was really good and is a great suitable addition for those who need meat...but he said even without was great. I also had leftover corn which went in another and was good, too. I will probably always put a little in cause it went well and added vitamins. Oh, I used black beans cause that's what I had and I like them better than kidney.
