Quick and Easy Tiramisu

Sweet Potato Pie II

The recipe turned out great.....tasting better than my pumpkin pie recipe. I did modify the recipe just a bit....incorporating the eggs all at once instead of beting the egg whites separate (serious time saver) and using sweetened condensed milk instead of the evaporated milk AND sugar. I doubled the recipe tto make two pies and they both came out perfectly fine. I would recommend baking tthe sweet potatoes in the oven for two hours and using a food processor to make the potatoes smooth for a better texture. This recipe even allows for a slight mishap of forgetting to turn the oven temperature down. THANKS FOR THE GREAT RECIPE!!!!

Chicken and Peppers with Balsamic Vinegar

This is delicious! I marinated the chicken in balsamic vinegarette all day. It has such a nice flavor. My husband and I had just had rice the day before so I served it with couscous instead. Great dish!

Blueberry Muffins I

These were okay. They certainly weren't bad, but I feel they need a little tweaking in order to make them *really* good. I made them just as written and you could taste the baking powder a little too much... I'm not sure if they need less baking powder, or more sugar...

Pesto Sauce

This pesto is soooo yummy and soooo simple. I had to halve everything since I only had a cup and a half of basil, but I kept the parmesan cheese at the full 1/4 cup. I don't think my husband was too crazy about it, but he's not into foods that are new to him and he had never heard of pesto before. I loved it! I'll definately make it again!

Zucchini Brownies

Well, I am very glad I decided to review this the day after I made the brownies. When I first tasted the brownies after letting them cool for a bit, I didn't think they were nearly moist or chocolatey enough. I can't blame the lack of moisture on the recipe because I only had a cup and a half of zucchini on hand for it, but I had decided that I would add some chocolate chips next time to make up for the lack of chocolatey flavor. However, after leaving them alone for almost 24 hours, I had another one and it tasted way better! So I guess leaving them sitting for a while helps. In the end, I was very happy with the way this turned out. Who knew veggies and chocolate would work so well together? I may add the chocolate chips next time anyway, just to see...

Apple Muffins

These were pretty good. They weren't sweet enough for my taste, so I found another recipe on this site for "Cinnamon Honey Butter" and drizzeled it on top of the muffins. However, a couple friends of mine enjoyed the muffins as they were and stated that they were "amazing." So even though I give it four stars, two of my friends give it five!

Cucumber Raita

This was delicious! Changes I made: - used strained nonfat plain yogurt (don't have Greek yogurt available) - omitted mint - added garlic powder - added cumin - grated the cucumbers and pressed them between two paper towels to strain them - and I ate it right away because I didn't want to wait. YUM!

Spicy Cucumber Soup

This soup was a hit! My kitchen smells delicious and I can't wait to try it again. What I did differently: - omitted the crushed red pepper flakes - used chicken broth instead of vegetable - used 4 smallish cucumbers - added 3 small potatoes What I plan to do differently next time: - half the cayenne pepper (at least) - puree half of the soup to a chunky consistency, and puree the other half to a creamier consistency I didn't believe the reviewers who said it was too spicy. We love spicy food so the only thing I omitted was the crushed red pepper, because we didn't have any on hand. It wasn't spicy enough to stop me from eating two bowls of it -- but I do think that next time I will at least halve the cayenne pepper. If it's still too spicy after that, I may cut back on the curry. I think the curry is part of what makes this so tasty though, so that's the last thing I'll consider cutting back. My husband didn't like the creamy consistency, so I'm going to try leaving half of the soup a little chunkier for him next time. My husband is not a soup lover, and we were both a little wary of cucumber soup -- but he really seemed to enjoy this soup so it's definitely going to be a keeper for our family!

It was alot easier than I thought. I used clams instead of mussels, next time I will try it with mussels, I also didn't have any white wine on hand so I used red instead and it was still good.

Herb Roasted Pork

This recipe was easy, simple and delicious. It's the first time I've ever tried this recipe. I didn't have sage on hand so I used 1/2 tsp of rosemary and 1/2 tsp of thyme. Also added garlic salt to the dry rub. It was great.

Tropical Pork Chops

Delicious! This was a huge hit with my daughter and my husband seemed to like it too. A couple notes: I only had pineapple chunks so I chopped them up really small, instead of using tidbits. A quarter cup didn't seem to be enough, so I put in a little more. I still didn't think it was enough when we ate it, so I think I will use a half cup or more next time. I would probably also put more onion and garlic in it next time, but that's just my personal taste. :) Also, I served this with Thai yellow curry rice -- the smells were delicious, but the flavors didn't mix well, it made the dish taste too salty. I also tried the sauce over boiled potatoes though and it was delicious -- the potatoes just soak up the flavors.

This was good -- we had it for the first time tonight. I sliced the potato a bit too thin though and it got a little mushy. Next time, I think I will alternate layers of potato and onion, and season the meat more.
