Baked Pork Spring Rolls

In all honesty, I didn't even look at the filling recipe. I simply never thought to BAKE the spring rolls. It cuts out so much of the fat and calories. A spring roll wrapper alone is only 50 or less calories. Hint: rather than add cornstarch to thicken the liquid, I let my filling sit in a colander for a about five minutes to drain excess liquid before putting in the wrappers. here's my version of the filling: use similar amounts of cabbage, carrots, green onion and cooked chicken breast. Chop finely. Stir fry in 1/2 tbs olive oil, add 3 tbs low sodium kikkoman soy sauce, grated fresh ginger, black pepper and minced garlic to taste. Stir fry until cabbage has softened. Drain mixture in a mesh strainer to reduce excess liquids. PLace in wrapper and bake according to this recipe.

Christmas Breakfast Casserole

I was looking for a recipe that I could use a carton of eggs that was getting ready to expire and some leftover coctail breads and cheeses. This was perfect. important tips: 1. Don't skimp on the greasing! This will totally stick to the bottom of your pan. 2. You don't have to let this sit over night. Baking immediately after preparing it won't ruin anything. 3. This recipe is very forgiving. You can add extra eggs and other items, like peppers, sausage, turkey whatever flavor combinations you prefer. Just make sure you pat and drain any excess water or grease off the items you wish to add. This had a really good base for experimentation and leftovers. It's also great because like a pizza, I was able to stratify different layers of vegetables and meats to suit my family. My partner and my section was layered with hot sausage, jalepenos, havarti,cheddar bacon, onions, and garlic. The kids simply had bacon and cheddar. And it was all in one pan! In my opinion, everyone should have some version of this in their recipe arsenal. It will come in handy for any crowd. Thanks for the inspiration for a delicious Christmas breakfast!

Beth's Spicy Oatmeal Raisin Cookies

So I decided to change things up a bit for Christmas. Beth's Spicy Oatmeal Raisin cookies. I was thinking about pine trees and egg nog and then I started thinking about cinnamon, which somehow made me start thinking about oatmeal although I don't see any connection on that last part.. The whole process was fairly straight forward. We didn't use shortening, and substituted with only butter. We also decided to make 2 flavors!: 1) Oatmeal Raisin 2) White Chocolate Walnut Oatmeal Raisin These cookies really spread out when you start baking so make sure you give them room or they will combine with the adjacent cookie and result in a complex phenomena called "cookie-neighboring". The cookies were slightly soft after baking, but the following day they were crispy at the edges and chewy in the center. I firmly believe the taste had improved after waiting a day. We liked both flavors but agreed the traditional Oatmeal Raisin flavor was better, and went fantastic with a Starbucks Latte. Next time, I would use slightly less sugar, maybe a 1/4 cup of granulated sugar than 1/2 cup. And I would add more raisins! I hear if you soak the raisins in boiling water they will become more plump and moist! I'll have to implement that as well. All in all, a great recipe and appropriate for the holidays. BAKE OR DIE!

Swedish Meatballs

These were really good. My husband is not a fan of butter, so I made pasta and just poured some gravy over it. On day 3, we only had three meatballs left over, so I quartered them, sauteed onions, celery, and carrots in a soup pot, added the meat and gravy, poured in some more broth, and made a soup out it. The soup was good, too.

Easy Lemon Cookies

-Diana's daughter- Absolutely amazing!! I followed the advice of some of the reviewers here (the store was out of lemon cake mix) and used yellow cake mix instead. They all turned out beautifully! Everyone I gave them to raved about it. I also used 1 T lemon juice and some lemon zest on the first batch. This is too little lemon taste, and I recommend using more lemon juice if not using lemon cake mix. I will definitely be making these again.

Pebber Nodder (Danish Christmas Cookies)

I halved this recipe because I'd never had them before and was reluctant to have 100 cookies we weren't excited about. However, they are really good and I love how they are tiny and bite-sized. Delicious and cute and easy to wrap up for a tiny gift for the neighbors at tea time :)

Caribbean-Style Sofrito

Not the sofrito I was looking for. Margie's Cuban Sofrito is the closest I've found to what I know as Sofrito. I guess Sofrito is like Ragu, your mama's is always best. This had no flavor. I ended up putting some oil in a pan, and cooking it down to take the bite out of the onion and garlic. I added cumin, salt, pepper, bay leaf and oregano in order to get a similar flavor to what I was looking for. I understand the caribbean has a lot of islands and this mixture of vegetables seems more suited for flavors like allspice, cumin, and habaneros.

White Chocolate Chip Oatmeal Cookies

-This is Diana's 14-yr-old daughter- These cookies were amazing! I made them for drama class at school and followed the recipe exactly. They were a hit!! All of my friends were raving about them. Even my friend who absolutely HATES oatmeal fell in love with them. These are cookies that will be loved by everyone, indeed.

Double Layer Pumpkin Cheesecake

This pie is a "wow". I'm so glad I made it! Now that I've had this, there's no going back to plain ole cheesecake or traditional pumpkin pie! After looking at some of the other reviews, I just doubled the spices and baked it in a water bath. It came out perfect.

African Chicken Stew

I tried this recipe because some people from the "Peanut Butter Chili" recipe site said it was like the "African Chicken Stew" recipe. They are nothing alike! This recipe was bland with carrots and celery... the garbanzo beans didn't really go with it. It was like eating generic peanuts. My husband thought it was okay, but he likes "Peanut Butter Chili" better, and we both agree that "Peanut Butter Chicken" was REALLY good!! Seeing other peoples reviews, and the extra ingredients they added, a can of diced tomatoes would've been a good idea. I figured that since "Peanut Butter Chicken" does that, I won't add it in this recipe, but, yeah, this recipe is bland, with fake peanuts...
