The Uzbek adage "a guest is more important than your father" reflects the unparalleled hospitality for which the people of Central Asia are renowned. In fact, visitors in the region are often welcomed into homes to share elaborate feasts. In Kazakhstan and Kyrgyzstan, it is customary to present a special guest with the famous delicacy of a boiled sheep's head. Although regional variations exist, such as the prominent role of fruits in vegetables in the foods of Uzbekistan and Tajikistan, the cuisine of Central Asia as a whole relies heavily on mutton and rich dairy products. The popular alcoholic beverage kumis, a fermented mare's milk, is consumed throughout the region. Even more prevalent, a cup of green or black tea (rarely sweetened) accompanies almost every Central Asian meal. Set on the Caspian Sea, the southwest region of Turkmenistan is famous for its fish dishes -- otherwise a rarity in Central Asia.
