Black Bottom Cupcakes I

Reviewed: Dec. 4, 2009
Good dessert, not my fav but very good. Not sure how people are getting so much extra filling or aren't getting 24 cupcakes. Only fill the cupcake 1/3 full and put a big dollop of cream cheese mixture on top. It comes out to a perfect mix. Waiting to see my friends reactions now...

Thanksgiving Leftover Casserole

Reviewed: Dec. 3, 2009
We loved this casserole. I tripled the amount of turkey, added garlic powder also, added salt & spices to taste rather than measuring, also added extra potatoes (needed it to really feed 8 hungry people), prepared a box of stove top for the stuffing, & added corn. Rated this 4* because of the portion size being off; I don't think we would have like this very much with only 1 cup of turkey and it wouldn't have fed our whole family. But with the few changes it's a great family recipe.

Blueberry Sauce

Reviewed: Dec. 2, 2009
My comment shouldnt count because I altered it a lot. But here I go anyway in case someone wants my advise. I used what I had (blackberries) and it was super. I used freshly squeezed OJ which i think helped not have that "overpowering" Oj taste a lot of folks mentioned. I used vanilla because I didnt have almond extract. Everything elsed remains the same. Fabulous. I really liked this over fresh homemade waffles. Oh and kind of squish the berries a little as they cook to get the huge chunks of berries a little smaller.

Broccoli Chicken Casserole I

Reviewed: Nov. 30, 2009
I'm eating this right now. It's very good! I adapted it just a little bit. I boiled the chicken in vegetable broth (would have gone with chicken broth, but I didn't have any on hand). I used 2 cans of the mushroom soup and as another reviewer suggested, substituted 3/4 cup of milk for the mayo. I mixed salt, lots of pepper, a pinch of ginger and a teaspoon of paprika (also suggested by another reviewer). I used garlic herb bread crumbs instead of stuffing because that's what I had. This is really great. What I like most about it is that it's easy to make, and so adaptable. Next time I might include peas and carrots as well. Thanks for the recipe!

Real Hummus

Reviewed: Nov. 27, 2009
I make hummus at least once a weak and I used to discard the liquid in the can , but after trying this I have to admit that the liquid makes difference , it gives the hummus a stronger flavor . I always add cumin .

Cake Mixes from Scratch and Variations

Reviewed: Nov. 27, 2009
I made the yellow cake and it was awesome , very fluffy and moist . I think it`s unfair to compare this with the cake mix , this cake has a fresh taste without too much sugar . I used oil instead of shortening and 1 1/2 cup milk (as recommended by other reviewer) . the second time I`ll try to make an orange cake by adding 1 cup of milk + 1/2 cup orange juice + orange peel , and I`m going to update this. thank you for the this nice recipe

Chewy Cocoa Brownies

Reviewed: Nov. 24, 2009
it was ok but not what I was expecting , it`s totally different from any brownies mix, as another reviewer said it`s moist but it`s not chewy or fudgy the way I like , and the batter is thick like a cookie dough . it`s a cake like brownies . the only thing I like that it`s not too sweet.

Louisiana Sweet Potato Pancakes

Reviewed: Nov. 20, 2009
These were pretty good. Will probably make again. The only modifications I'd make: this time I used nonfat milk. Next time I'd use at least 2%. That was my own fault. They were a little dull with the nonfat. As for changing the original recipe, I think next time I'll add a teaspoon of cinnamon to the mix!

Eggplant Parmesan II

Reviewed: Nov. 14, 2009
Excellent! I fixed it tonight and I'm eating it right now. I made angel hair pasta and am eating it topped with the eggplant parmesan. There are a couple changes I'll make next time, though. 1) I will sweat the eggplant, as suggested by others. 2) I will also bake the eggplant longer in the beginning. Perhaps 7-8 minutes on each side. This is a wonderful recipe and I will definitely be using it again!

Aloo Gobi

Reviewed: Nov. 9, 2009
We did not enjoy this very much, although we did eat it. I had trouble with the potatoes and cauliflower scorching on the bottom of the pan and ended up pouring in some water to save it all. I did use only one chile, as per the submitter's suggestion to adjust to taste. There seems to be a little something missing from the spice mix or maybe the quantities are out, but the flavour was off compared to other aloo gobi I have tried.

Roasted Beets and Sauteed Beet Greens

Simple, clean, and very tasty! Next time I might add some herbs. This time, I took another reviewer's suggestion and roasted the beats with carrots. I also roasted some garlic cloves along with it. Very, very good! Will definitely be making this on a regular basis.

Curry Pumpkin Soup

Reviewed: Nov. 8, 2009
It was OK. I will probably make it again, but I will most likely omit the sugar. I used red curry, which was the best part of the soup because I enjoy spicy foods! Anyway, this was easy to make, with inexpensive ingredients, and very healthy!

New Orleans Chocolate Bourbon Pecan Pie

Reviewed: Nov. 2, 2009
I love pecan pie. I love chocolate. I love bourbon. But I guess I really don't love it when these three tasty things are mixed together. I only had one slice (and I made two pies). It was OK, but I wouldn't eat it again. However, I'm giving it 5 stars at the request of my friends, who fell head-over-heels for this recipe and devoured both of the pies. So I would make it again for special occasions, but never for myself.

Cheddar Biscuit Cups

Reviewed: Oct. 28, 2009
I didn't have self-rising flour on me, so I substituted with all-purpose and salt and baking soda (didn't have baking powder). Apparently, that doesn't work b/c it was terrible. I'm going to give this recipe another try w/ either baking powder instead of the baking soda, or with self-rising flour. But for any of you out there thinking of using baking soda instead of the baking powder -- DONT!
