Chef John's Ham and Potato Soup

Simply perfect for those cold days (I'm in South Africa, it's winter here). Doubled the recipe, but, thanks to everyone going for second helpings the pot was empty by the end of the day! Keeper, no changes needed.

Beer Butt Rosemary Chicken

This was great! First time trying this cooking method. It's a little trying, because it definitely requires two people, but the chicken was soooo moist I could hardly believe it! I also used a well-greased recycled tall olive jar instead of the beer can because I'm wary of the paint and the metals in the can. Presto! I doubled the rosemary and the oranges under the skin, and roasted it with onions, carrots, sweet potatoes and garlic. Yum!

Easy Brazilian Lemonade

We own a resort in Zanzibar Tanzania.Have 27 lime trees on the grounds.Needless to say we are using our homemade limeade for welcome drinks for the guests on arrival.I have just tested this and it's truly wonderful! Our limes are small and strong,so we juice them first,make the limeade then blend it with condensed milk! So thrilled to have come across this!

Chef John's Buttermilk Fried Chicken

It marinates long, but is well worth the wait. So succulent and moist on the inside and crispy on the outside, my family demanded that I make it for second day running! The blend of spices is also very, very nice. Except next time I'll omit oregano.

Blueberry Cornmeal Pancakes

These were very flat, tasteless pancakes. I subbed ordinary dairy milk for the soy milk and ended up adding 1/3 cup of sugar once I tasted the first one and that helped, but I won't be making these again . these just caught my attention as I thought they would be a little like a pancake version of Nigella's blueberry cornmeal muffins - they absolutely were not.

Fabulous Fruit Salad

I've been using this recipe for years now because once I made it the first time it became a family favorite. It's my go-to healthy dessert. I use all flavors of yogurt (vanilla is an all time favorite) with apples and whatever fruit is in season. You can't go wrong with this recipe.

Ultimate Twice Baked Potatoes

Grilled Chicken Wings with Sweet Red Chili and Peach Glaze

This sounded too good to pass up and it was! I didn't plan on modifying the recipe but when I looked at the ingredients of all the brands of sweet Thai chili sauce and they all started with sugar I had to make a change. I used Thai chili sauce instead and PERFECTION! Just use mild if you don't want it really spicy. Okay, I also used boneless skinless chicken breasts and eliminated the cilantro because I can't stand it, but that just shows how versital this recipe is. I also used peach apricot preserves because that's what the store had. I grilled the chicken on the BBQ (didn't marinate ahead of time). To go with this I made the Asian Coconut Rice recipe from this site. I know my family will be requesting this a lot. Easy & delicious!

Asian Coconut Rice

Best rice EVER!! I used my rice cooker and did 4 cups of jasmine rice with 2 cans of coconut milk and 2-1/2 cups water (per rice cooker directions = 1-1/2 cups of liquid per 1 cup of rice). Perfect! Honestly it was the best rice I've ever had. I didn't add anything else except for the rice, water, and coconut milk (full fat) . Sugar & salt are not needed. Can't believe it has any negative reviews...I'd give it a 10 if I could. My whole family was impressed so this will be a regular for us!

Fresh Strawberry Pie III

Whole family ejoyed this a lot. Didnt have strawberry gelatin, used raspberry instead. Yum. Followed others' idea, and put a layer of cream cheese between the crust and filling. Such a good idea!

Simple Scones

These were so delightful! There's no need to freeze and grate the butter. I just took butter straight from the fridge, cut it into table-spoon sized pieces, and used a pastry cutter to combine it with the dry ingredients.

Tabbouleh II

Tabouleh is perfect with any middle eastern dishes. I have noticed there are two kinds of Bulgur : coarse and fine , and I think the boiling water is supposed to be for the coarse one . I always use the fine Bulgur and I just soak it in water for less than 20 minutes . I use green onion instead of white onion, I cut the head and the steams. I also like to add black pepper

Baked Falafel

I liked it as a healthy lite sandwich that keeps U full . but it taste almost nothing like the real Falafel . I doubled the coriander to make it 1/2 tsp , and for more flavor I add 1/4 cup fresh Cilantro and one TBS of fresh dill . I use the following toppings for my sandwich: crumbled feta cheese , tomato , lettuce, onion, cucumber and Kalamata olives .

French Spring Soup

This was delicious! The neighbours and severl friends have asked for the recipe. Living in algeria where aspargus isnt produced I had to improvise and used fresh garden peas and a tiny bit of bottled asparagus. The only thing I will change is the rice....I think having potatoes and rice in the same soup is a bit much....Thank you for such a good recipe!!

Super Easy Rosemary Bread Machine Bread

This bread turned out wonderful. The texture and flavour was great. I followed the steps exactly and was very pleased.
