Stay at home mom and attending college online, with one lil guy and one almost adult daugther, who also likes to cook, 2 big guys (1 housemates and 1 love of my life). My daughter and I cook for everyone for dinner and occasionally for breakfast. I try to make it fairly healthy and easy.

Super Moist Pumpkin Bread
Made this with whole wheat flour and it was excellent and a good source of fiber :)

Pork and Pepper Stir Fry
I used this recipe mainly for the marinade and reminding me to use chile paste. The meat was very tender but I did keep it in the marinade overnight and the next full day. I added lots of veggies and it was great!

Savory Italian Sausage Sauce
Even with some necessary empty pantry creative ingredient substitutions; this sauce was amazing! I doubled the batch but used only 1 1b of sausage. I also used sweet yellow onions in lieu of green onions, only one can of stewed tomatoes, 3 cans of paste, 1 of sauce, 1 tbsp of red wine vinegar with remaining water to replace 1/2 cup of red wine. I also didn't add all the sugar, I may try it with all of it next time just to see what changes but it seems like quit a bit. Maybe me substituting the paste vs sauce and stewed adjusts the sweetness of the sauce. It was excellent. We really enjoyed it!!
