Garbanzo Tomato Pasta Soup

I substuted some ingredients that I had on hand: whole tomatoes w/crushed, seashell pasta w/orzo and garbanzos w/a box of frozen lima beans. I also threw a bay leaf in. Very easy and tasty!

Stovetop Granola

Absolutely delicious and really easy. Amazing over yogurt. I stuck to the recipe exactly this first time, but will definately modify to reduce the fat as recommended by other reviewers. Foolishly thought I would just eat a half serving, but this is so addictive that strategy proved to be impossible to execute. May as well make it "lite" and enjoy it guilt-free.

Spicy Roasted Edamame

Based on the "oily" warnings from the other reviewers, I sprayed the beans with a couple of squirts of Pam Olive Oil. No oily residue at all! I loved the spice combination. I also left out the basil added garlic powder and a pinch of kosher salt.

Halloumi Cheese Fingers

Fantastic!!! I tried this using both a stainless steel and dark, non-stick pan. The non-stick worked much better, creating a very delicate and even crisp golden crust. In stainless steel this took a long time to color and then once it started, the cheese began to burn almost immediately. My gal pals have added this to the "must haves" for every get together.

Baked Tortilla Chips

I used flour tortillas and the chips were delicate and delicious. I wasn't sure how much of the spice the chips could take, so I went a little too light. Next time, I'll be more generous with my sprinkling.
