Nutty fruitcake:  1 Yellow butter cake mix:1 stick butter softened 3 eggs  2/3 water(I used the juice from 1 can of fruit, why waste it?) 1 can each.16oz?(reg size) peaches, mandarin oranges mix together and divide between 2 cake pans  that have been sprayed with Pam. &n MORE

I'm in my middle 40's. I have a loving husband that I have been with for 19 years and counting! I also have 3 wonderful children. They are all teenagers! Two are driving...(wheesh)!!! We have 3 dogs and we all love them...9-23-09 Update: I am a substitute lunch lady for the school distr. in town too!
My favorite things to cook
I Love to BBQ and Grill and the family seems to love it as much as I do! :] I pretty much cook everything. I love to try new things... Like out of cookbooks and such, although some do fail miserably! i keep trying anyway.
My favorite family cooking traditions
Thanksgiving Dinner. Which always includes oyster stuffing (delicious) I ONLY make it at Thanksgiving. My family recommends it. I make mashed potatoes that my mother-in-law taught me, and she's been making them that way for YEARS! They are delectable! :D
My cooking triumphs
I could say that my green chicken enchiladas never fail. They are pretty triumphant. hahaha
My cooking tragedies
There have been some downers, and heartaches. I really can't name them all but one was one that I found in a cooking mag. that my family HATED. I will never do it again... but I can't seem to remember what it was... and I don't think I want to!!! I make a mean grilled pizza and am working on my bread making skills thanks to this site! I am forever addicted to the people and recipes on here! OXOXO ):

Cindy's Awesome Clam Chowder
Holy guacamole, my craving has been quenched! This chowder was just Terrific! I did add chopped onion. That was only thing I changed. Very flavorful, the ff half and half was just the ticket, save some calories but did not sacrifice the flavor. My kind of chowder! I served it with sour dough bread. Thanks for this delish dish Cindy!!

Exchange Gang Pasta with Shrimp
I wanted to make a shrimp dish yesterday. I found this in my files and said Yes! This is it! I did make a few changes Only out of necessity. I was out of spaghetti so I used Penna instead. I did not have any wine so I subbed chix broth. There was a little too much liquid in the pan,and for that, I used the goat cream cheese I had in place of the 1/2 & 1/2 cream. I Finally found the broccoli Rab, I have been looking for, forever. I added that instead of the spinach.I was pressed for time and used cooked shrimp.This dish was the BOMB!! The Whole family and 1 cousin ate the entire dish!! I sprinkled the parm on at the end and added the tomatoes at the end like some reviews said to. This was a wonderful dish!! Thanks to everyone who contributed to the creation of such a fine meal!! I rounded it out with toasted garlic bread. AAHHH Keeper! Thanks Deb!! You Rock!!

Caramel Popcorn
I made this this afternoon for when the kids got home. I had some kettle corn that didn't have much flavor and used that. I added a 1/2 jar of roasted peanuts I had and was it goood!! I did not bake it the whole time, I was afraid I was afraid I was going to burn it and it only spent about 30 mins baking.I actually cut this recipe in half. It was perfect and soo easy to make.
