For the meatloaf I used homemade salsa and added corn kernels for a touch of sweetness. The cauliflower should have been cauliflower mash, however it did not quite turn out as creamy as anticipated. SO I scooped them into little muffin cups, sprinkled with shredded marble cheese and red chilies. Baked for 15 minutes and they were so delicious, we couldn't have enough. For the Thai chili dressing, I used Scotch bonnet pepper sauce instead of the Sriracha Sauce for a spicier kick.
