About this Cook
I am happily married to a wonderful man. We have 5 wonderful boys and recently had are first grandchild, a little girl. Needless to say she is already spoiled rotten. I am having so much fun buying for a little girl! With 5 boys food was always a big deal. They have large appetites so it is a good thing I love to cook. Food and Family go hand in hand.
My favorite things to cook
We owned a Mexican restaurant while I was growing up so my specialty is Mexican food. I do love trying out new recipes and try to do so at least once every week. I like putting a spin on my grandma's recipes that she past down to me.
My favorite family cooking traditions
Making tamales every year. My mom, my two sisters and I get together and make 40 lbs at once. We freeze them so we can have them throughout the year. Another big tradition is making my grandma's pudding that she made for us every year at Thanksgiving. It takes hours to make but well worth it.
My cooking triumphs
Learning how to make my grandma's pudding without scorching it and having the right consistency.
My cooking tragedies
When I first got married my husband wanted me to make Biscochitos. I had never made them so I went on line and found a recipe. I always follow a recipe exactly the first time I use it and make changes the next time if I feel it is needed. The recipe for Biscochitos that I found called for 1 cup of baking powder, I thought that seemed like a lot but followed the recipe, oh how I wish I hadn't. They were the worse cookies ever. But my husband being the wonderful man he is told me they were great and proceeded to eat them. I finally made him stop and threw them all out.

Spinach and Feta Turkey Burgers
I have never had a turkey burger before but I am trying to eat better so I thought I would give these a shot. WOW!! I am so glad I did. DELICIOUS! I used fresh Spinach and sautéed it with a minced clove of garlic and 1/2 of a medium onion diced. I also added 1/2 cups bread crumbs. The mixture was still hard to make into patties so I put the mixture in the refrigerator for 1 hour. It was much easier to form into patties. I then placed the patties in-between parchment paper and into a freezer bag. I froze them over night for our picnic the next day. We grilled them and put a little bit of mayo with lettuce, tomato, onion and avocado on them. VERY GOOD!

Perfect Baked Potato
I am giving this recipe 3 stars because the potatoes were way too firm for our taste. I think the temp should be higher. The skin was nice and crisp and tasty.

Portuguese Chicken I
I doubled the recipe to feed 3 of my boys and husband. They loved it. I did add some garlic salt and a 1/2 tsp more pepper to give the gravy more flavor but otherwise everything was delicious. I used drumsticks and thighs and they turned out very moist.
