I have always loved to bake, but hated to cook. This site makes it so much easier because the ratings and comments save me from wasting time and having to learn where something should be adjusted. As I learn more, I hope to be able to contribute helpful tips as well.
My favorite things to cook
Chocolate chip cookies! I actually like the dough more than the cookies. I really like the ethnic dishes and family favorites, I love being able to impress people with different things they haven't been exposed to.
My favorite family cooking traditions
Spices! Our family is on a low sodium meal plan so learning to live without salt has been interesting (painful!) but the right spices make all the difference.
My cooking triumphs
I mastered my brand new flat top electric stove.
My cooking tragedies
I am hypoglycemic and not happy about giving up my treats so I am always trying to find ways to make treats healthier. I am a fairly inexperienced cook so I end out with some interesting things. Once, I thought I'd make healthy chocolate chip cookies (cookie & healthy = oxymoron) so I used egg whites instead of eggs (I based it off substitution charts) and I used splenda instead of sugar. I should have taken a picture because it was one of the oddest things I've ever seen. I don't think egg whites and splenda get along. The cookie dough actually came out like a very thick, sticky glue. When I went to pull my spoon out, the dough stuck to the spoon and pulled like an elastic! I managed to get some on a cookie sheet (I'm an optimist) but the end result, oh my. The cookies were so hard I swear they cut my gums. I still laugh about that because I've never had anything come out that bad again (learned my lesson,lol).

Strawberry Cake from Scratch
Very interesting! Ok, my recipe modifications based on other reviews: Cut sugar to 1.5 cups. Use unsalted butter. Use whipped egg whites only - fold in at end. Use buttermilk. Measure flour after sift. Use 2t almond extract, not vanilla. Use 1T sugar to sweeten strawberries if using unsweetened berries. Bake for 20-25min for cupcakes. I don't think it tastes like "authentic" strawberry either but it's unusual & I still like it. Also, everyone I served it to was very impressed. Thanks for sharing.

Lemon Yogurt Muffins
When I made these, I thought I might have put too much flour in because the batter was so thick and didn't seem to have a lot of liquid. However, when they were done, it was a fantastic consistency. As for flavor, I like them but not love them. I used plain greek yogurt, added extra juice and peel (go easy on the extra peel or it will be too bitter) and I used honey in the glaze instead of sugar. Next time I think I will try some lemon extract and see how that works. Mine were done in almost 15 minutes - 20 would be way too long IMO. Will definitely make again.
