About this Cook
My name is Mercy and I am a mother of two daughters. We live in Alabama where I work as a school teacher. I often feel like a short-order cook: my husband eats very little carbs, my younger daughter is on the GFCF diet for autism, and the four of us are athletes who are very health-conscious eaters. That often means that cooking dinner means four different plates of food!
My favorite things to cook
I have to admit we eat very plainly, mostly to accommodate the different "diets" we subsist on. A cooked and mildly seasoned protein, a steamed vegetable, and a healthy carb side dish are typical. I'm trying to branch out into recipes more, especially ones that I can make ahead since I work outside the home.
My favorite family cooking traditions
I love to include my daughters in the cooking as much as I can, but their young ages make it difficult at times. It's often really tempting to send them off to play while I make dinner because the job will get done faster.
My cooking triumphs
I'm proudest of "tweaking" recipes to make them much healthier and to make them fit into the GFCF diet that my daughter has to follow.
My cooking tragedies
My husband has been sworn to secrecy on the time I learned about the crucial difference between all-purpose flour and self-rising flour. They were called skeet biscuits. I will not say any more.

Balsamic Cole Slaw
NOTE FROM THE SUBMITTING COOK: When I'm in a hurry but still want a tasty/something-different/fast side dish, I buy the bag of pre-chopped and washed shredded cabbage, along with a bag of matchstick carrots. I usually don't trust the pre-washed salads but since this is getting heated on the stove I'm more apt to give it a quick rinse then throw it in the skillet. Not the same as doing it by hand but it's great in a time pinch!

Chicken And Apple Curry
I'm sure it doesn't taste the same, but since I have to cook gluten-free and casein-free for my autistic daughter (see my blog on the autism diet on this website), I replaced the butter with spray vegetable oil and replaced the milk with apple juice, since I was using apples anyway. To cover up all the fruity flavor I used a tomato flavored chicken boullion instead of the chicken broth.

Country Apple Dumplings
I wanted to make this for my girls before school on those chilly fall mornings, but I also wanted it to be a healthy, filling breakfast. I used diet Mountain Dew and Splenda instead of sugar, used spray cooking oil in place of butter, but best of all...I put down a layer of shredded cheddar cheese on the crescent roll before placing the apple wedge to up the protein and calcium (I'm sure fat free cream cheese would work too). I'm sure it's not the same as the original recipe, but it's a school-morning variation and it was absolutely delicious! Best of all, I had the pan prepared the night before so I just popped it in the oven in the morning while they dressed.
