I am a stay at home mother to three beautiful children. Aimee is 18, Tyler is 12 and Will is 7. My husband is a family practice physician in our hometown.
My favorite things to cook
I love to cook. I enjoy cooking all sorts of things, from the simple to the complex. I really love to bake. My sweet tooth carries over into my cooking! I would love to learn the art of cake decorating.
My favorite family cooking traditions
My mother has always had a Christmas tradition of making tons of fudge and peanut butter balls and coconut balls. When I was about 7 I took an interest in helping her out. I enjoyed rolling the balls and being the taste tester! Since I moved out on my own I have continued this tradition. My children and I make candy for a month during the holidays. It is a wonderful time to bond and to teach them a little chemistry without them knowing it! I also try to make new dishes and introduce my family (who think I cook a lot of "weird stuff") to new foods and styles of cooking. One Thanksgiving I made a sweet potato and plantain mash and they thought I was nuts! But there was not a drop leftover...
My cooking triumphs
I was the queen of my sons first grade class when I baked and decorated spiderweb cupcakes and made a graveyard cake. They thought I was so cool. That was my "rock star" moment!
My cooking tragedies
My husband is a big clam fan. For our first wedding anniversary I decided to surprise him with a candlelight dinner starring pasta with white clam sauce. We live in a very small Kentucky town. The only clams I could find were canned. I had no idea how to handle them. Needless to say, it was not by best dish. He ate it and said he loved it anyway. Bless his heart, I tasted it and ended up feeding it to the cat. I have never tried to make that again. Maybe one day...

Apple Pork Chop Casserole
My husband picked this recipe for our Sunday night dinner. I needed 4 servings for our family. I made a few minor changes: seasoned the pork with salt, pepper and garlic powder, sauteed a small onion in the leftover fat from browning the pork chops and used golden mushroom soup for the topping. I used a whole box of stuffing and a whole can of soup. The stuffing was so tasty! The apples and raisins went so well with the pork. We will be making this again and again! Thanks!!

Bill Clinton's Lemon Chess Pie
My husband wanted a chess pie and I have never made one. I looked for a good recipe and decided on this one. I followed the recipe exactly. I baked mine for over an hour and had to cover the crust to prevent burning. I took it out of the oven when the middle was set. My husband really enjoyed this. He said it isn't old fashioned chess pie like his grandmother used to make but it was still tasty. It was very lemony, and it helped to cut the pure sugar taste of most chess pies. The only reason I gave 4 stars was due to the cooking time and the consistency of the final product. As you can see in my photo, the filling was still a little loose. The pie was very hard to serve and would fall apart in a few seconds after being put on the plate. Still tasty! Thanks for a great new twist on an old classic!

Double Layer Pumpkin Cheesecake
This cheesecake was AMAZING!! I don't think I will ever make plain ol' pumpkin pie again! It is very light and tasty!! The only changes I made were to use a little extra pumpkin and spices. This was even a hit with my son who normally won't even look twice at a pumpkin pie!
