Pico de Gallo Chicken Quesadillas
I agree that a good prepared salsa would be just about as good and less work. Another way I make it easier is to use rotisserie chicken, which also adds some nice flavor.

Mrs. Sigg's Snickerdoodles
These are the Snickerdoodles I remember eating as a kid! My husband's comment..."Now, that's a cookie." Excellent!

Sloppy Joes II
I'm sure these are even better with the ground beef, but in the interest of better health I used extra lean ground turkey breast. I ran out of ketchup, so I ended up using about 1/4 cup BBQ sauce and throwing in two spoonfuls of mild salsa. It was delicious!
