Mexican Mocha Bundt Cake

Reviewed: Nov. 6, 2009
Great cake! I've made this twice in the last 2 weeks. The first time, I had a little trouble with my pudding layer and part of the cake fell on it - still yummy, but not so cute (became lovely cake balls!). Make sure your pudding is in a *thin*, even layer. I loved the cinnamon-coffee flavor of this and will definitely make it again. Both times my cake took 55 minutes to bake - something to keep in mind. Thanks for the recipe!

Chipotle Shrimp Tacos

Reviewed: Nov. 6, 2009
Delicious - and spicy! I loved the bacon, shrimp and chipotle together, a combo I had never tried. I added a little lime juice to combat the dryness. I served this with avocado, which helps break the heat and was a great texture with the shrimp. Thanks for the recipe!

Fiery Fish Tacos with Crunchy Corn Salsa

Reviewed: Nov. 6, 2009
Another great idea, unfortunately written. I bought the ingredients for this recipe without reading the amounts called for (my bad), but was able to adjust them as I made it. An inexperienced cook following this recipe is going to end up with incredibly salty fish that will burn their face off. Even changing the tablespoons to teaspoons is going to be HOT, so I would suggest just seasoning the fish to your taste. The salsa is full of great textures, colors, and flavors, but is bland as written; salt and cumin helped make it a great contrast to the fish. In the end, we enjoyed these very much, but I can only recommend title - and can only assume that all the great ratings came from people that did not follow this recipe as written. Sorry!

Pesto-Stuffed Pork Chops with Caramelized Onions

Reviewed: Nov. 4, 2009
I was expecting the flavors in this recipe to be "good" and I was really pleasantly surprised at how "great" they are. I used all ingredients as written, except I tripled them and stuffed and rolled 2 tenderloins instead of using chops because that's what I had. The cumin and paprika are a great touch and the onions were delicious. Super-easy, few ingredients. I would definitely make this again, using either chops or tenderloin. Thanks for the recipe!

Winter Fruit Salad with Lemon Poppyseed Dressing

Reviewed: Nov. 4, 2009
Excellent! The dressing is on the sweet side, but tastes great and goes perfectly with the fruit, cheese and nuts (my cashews were salted, which was also nice). I left the apples and pears unpeeled by preference. Thanks for the recipe!

Creamy Sweet Potato With Ginger Soup

Reviewed: Nov. 4, 2009
Great soup! The vegetables caramelize beautifully with this method (though I think it would also work fine in the oven, which would take longer but keep my hands free for other things). I added extra cayenne pepper, lots of black pepper, and used heavy cream instead of 1/2 & 1/2; otherwise followed as written. I didn't find it at all too sweet - these are sweet potatoes, after all. Thanks for the recipe!

Parmesan Tomatoes

Reviewed: Nov. 2, 2009
Surprisingly delicious! I made these as written, though it took about 25 minutes at 350 to brown them. I used a coarse-ground brown mustard, loved the flavor with the tomatoes. I would probably broil these instead of baking next time, as other reviewers suggest. Thanks for the recipe!

Clams and Chourico

Reviewed: Nov. 2, 2009
Excellent! I followed this recipe as written, except using petite diced tomatoes instead of crushed, and chicken broth instead of clam juice. I used Redhook ESB for the beer. Nicely done, thanks for the recipe!

Gourmet White Pizza

Reviewed: Oct. 31, 2009
Great pizza combo! I made this as directed, mixing the chicken with the Alfredo mixture. I chopped the tomatoes for the top instead of slicing them and added extra parmesan on the top. Huge hit with MrByrd. Thanks for the recipe!

Yum! I made this as written, using romaine instead of red lettuce and toasted sliced almonds. Perfect! Thanks!

Beef and Vegetable Stew

Reviewed: Oct. 30, 2009
This is very good. It's not a "traditional" beef stew, but very tomatoey and herby. I've made it twice in the last few weeks and the 2nd time I added more beef stock and a little red wine. Good stuff - thanks for the recipe!

Chicken Salad with Bacon, Lettuce and Tomato

Reviewed: Oct. 29, 2009
We really loved this. I made it with leftover Roasted Lemon Herb Chicken from this site, and otherwise followed the recipe adding lots of black pepper. I ate mine on lettuce with avocados as instructed, and my guys had theirs on potato rolls. Everyone happy, thanks for the recipe!

Lemon Ginger Sauce with Dill

Great sauce! I made this exactly as written and used it on lemon-steamed salmon. The flavors are BOLD, so this recipe is not for the meek. Really different and delicious. Thanks!

Carrot Zucchini Saute

Nice flavor! I would suggest cutting back the cooking time to 5 minutes each instead of 10 for crisp-tender veggies. Very simple, yummy recipe! Thanks!

Roasted Lemon Herb Chicken

Reviewed: Oct. 28, 2009
Yum! This turned out really well. I roasted 2 4lb chickens, so mine took a little longer to cook. I threw the lemon peels inside the chicken after squeezing them for the oil, otherwise made exactly as written. Nice! Thanks for the recipe!!

Roasted Garlic Sweet Potatoes

Reviewed: Oct. 28, 2009
These are good - and garlicky!. Depending on the size of your sweet potatoes, you may want to add the sour cream slowly. Mine got a little looser than I bargained for. The cayenne is a nice touch, but go easy unless you know you love it. Thanks for the recipe!

Crustless Mushroom-Spinach Quiche

This is good. I made it as written using real eggs (5 large = approx 1-1/4 cups) and I left out the zucchini as I didn't have any. This sets up nicely and the flavor was good. Thanks for the recipe!

Apple Walnut Salad with Cranberry Vinaigrette

Reviewed: Oct. 27, 2009
Yum! I love this recipe as written, but I agree with the reviewers that suggest less onion in the dressing and adding onion to the salad. I put some green onionn and blue cheese in my salad this time. I also think this would make a great dinner salad with cold chicken or turkey, cheese and/ or bacon. Thanks for the recipe!
