Thai Peanut Chicken

Thai Peanut Chicken

I left out the peanuts due to personal taste, added mushrooms, red bellpepper and zucchini (steamed the broccoli and carrots first). I marinated the chicken in garlic, ginger, olive oil and balsamic vinegar for 2 hours. Served it on top of Calrose rice. Will definitely make again and again!
