I changed this up little:
1/2 cup butter
3/4 cup white sugar
1 egg
1/2 teaspoon vanilla extract
2 cups grated zucchini
1 1/2 cups all-purpose flour
1/2 tsp baking soda
1/4 tsp salt
1/2 tsp ground cinnamon
1 cup quick cooking oats
1 cup semisweet chocolate chips
