This is excellent icing for wedding cakes. It's very easy to work with, and you can vary the texture easily with water. Also, to achieve a very smooth 'fondant' look, I wet my spatula with water to smooth out the icing on the cake. And of course - it tastes fabulous! I love the flavor of almond for a wedding cake. Very sophisticated!
