I added 1/2 cup of yellow onion in with the garlic, jalepeno pepper, and chiles. I sprinkled the chicken with a spicy pepper blend and paprika before cooking it.

Photography Notes: I placed Cheesey Mexican Rice underneath the enchiladas. Then I spooned on green chiles and salsa, and I sprinkled on crushed cilantro. Very Good!!!
