Spinach platter with polenta meal

Spinach platter with polenta meal

This was a polenta and wild rice meal that I made from scratch, even the sauce. The polenta is under the red sauce, topped with sauteed onions and red bell peppers we grew ourselves, and cilantro sprouts from a local farmer. The black stuff is wild rice cooked in garlic and lime juice, and the tomatoes are like a pico-de-gallo salsa with fresh black pepper, cilantro and lime. I liked using the "bowls" created when cutting onion could be used to hold little servings of garnish like cilantro sprouts and lime zest.
