The dough turns out to be a little too dry and hard to knead. So, I added more water while kneading. I tested 2 different methods:
1) knead in shape and apply baking soda water mix with my hand by padding on the number 8 shape pretzel and let it rise for 1 hour before baking. 2) Also tried the original recipe method but after dipping in water, my 8 shaped dough fell apart; maybe I am slow and dipped too long. I will try the dipping before baking method. At the same time, I will pad the dough while rolling into long string with soda water mix since the dough is still a little too dry for me.
