Typical Poblano dishes

Typical Poblano dishes

These are two typical "poblano" dishes (from Puebla, Mexico). The dark, almost black thing is chicken mole; but mole poblano, which is slighty different from other moles around Mexico. The other is "chiles en nogada", a seasonal dish which is a large poblano chile stuffed with meats, fruits and nuts then fried and topped with a creamy cheese sauce and pomegranate seeds.
