Roasted butternut squash

Butternut Squash Pizzas with Rosemary

I cut the squash in 4 lengthwise, brushed it with soft butter, sprinkled with rosemary salt & pepper, placed on a baking sheet, covered it with foil and roasted it at 400degrees for about 50 minutes. It was easy to scoop away from the skin then roughly mash and season to taste. Spread it on the pre-cooked honey wholewheat pizza crust from this site with the caramelized onion, mozza and fresh parmesan and it was delicious. Everyone loved it!
