Mexican Chicken Corn Chowder

Soup provides an excellent opportunity to infuse even more vegetables into my family's diet, so I added carrots, whole kernel corn, and a can of Rotal to this recipe for more color, texture, flavor and nutrients. This soup was good the first day, but great a couple of nights later after the flavors had a chance to meld. To make it quicker to prepare, I used canned chicken.
