I had five tomatoes on hand (not the four the recipe calls for) but still had much leftover filling. The couscous mixture probably would've filled eight tomatoes.
You'll notice in this image some tomatoes split while baking. This is because I made the mistake of cutting a small hole in the top, and emptied the insides and filled the tomato through that hole. As the tomatoes expanded during baking, the skin wrinkled and shrunk, causing some tomatoes to split. I suggest you cut the tomatoes in half horizontally to fill them.
