Couldn't Keep our hands off them.

Ricotta Stuffed Zucchini

I decided to slice them up and serve them as an appetizer. It was a dinner party of 6 people. They went so fast. For sure going to cook again. So simple and so yummy. Only word of causion, if you're going to slice them up, let em cool a little bit, very hard to slice when the cheese is still gushing everywhere. The only recipe change was that I added ~half a teaspoon of minced garlic.
