Roasted Chicken with Risotto and Caramelized Onions

Added frozen chopped spinach in the last 15 minutes of cooking, cut recipe in half, used one can of chicken broth and 1/2 cup water , 1/2 cup milk, browned chicken with olive oil and a little white wine to deglaze the pan. Took about an hour to make, and many many pots, pans, and utensils used... sighh so much to clean up... just for 2 bowls of risotto...
