I didn't change ingredients in this recipe in any way. I did use a metal whisk as you can see in the photo but it didn't seem to matter in the end result. I used gal. ziplock bags to give the starter away to friends. That way they could just mush the bag daily. I found that to be much easier.

Photography Notes: This photo was taken the last day of the process. I baked a batch of this bread for myself and set aside 4 bags of starter for friends.
