Quite tasty! Because I did not have 1/4 C champagne vinegar on hand, I used 1/8 C raspberry vinaigrette and 1/8 C cane vinegar instead. I also omitted cucumbers and used fewer green onions. Next time I would like to try it with the cucumbers. If you like crispy tofu better than squishy tofu, I would recommend using smaller chunks of tofu than I did so that there is less squishy tofu inside the crispy edges. I used this dish as a main meal, accompanied by rolls, and it served three people.
