I have a carrot cake recipe that I've been faithful to and have used for many years. After trying this recipe, it is now my new favorite one. This cake is so moist and it baked really nice and even which prevented me from having to level it out. The only adjustment I made was cut the oil back to 3/4 of a cup and I used my own cream cheese icing recipe.
