I used half white onion and half red onion to add to the sweetness of the balsamic vinegar. I also sauted the mushrooms a little before I attempted the rest of the recipe. I served it with bulgar wheat mixed with briefly steamed vegetables (tenderstem broccoli, baby corn, bell peppers and garden peas).
