Coconut Tilapia with Apricot Dipping Sauce

I made the recipe according to Diane T's instructions but I used apricot preserves instead of jam and Inova oil instead of conola. This was an excellent fish recipe that doesn't taste fishy - and the dipping sauce is wonderful and can probably be used with other fish dishes as well.

Photography Notes: I used our Kodak Easy Share digital camera. I photographed the dish on a white plate to pick up the color of the fish and dipping sauce. The background table cloth is one that I purchased from a vendor at a Virginia wine festival.
