As you can see, I varied from the recipe for some of the cookies. I added the zest to the batter (an okay oopsie). For most of the batter, I made larger cookies and filled them with a variety of jam...some raspberry, strawberry, orange marmalade... Then decorated with the glaze. I think they were best as thumbprint cookies, but the original recipe is great. **For anyone hesitant to make these, you can't taste the carrot. ENJOY!!
