Just made some today and found this great pic of the theatrical way the cooks assemble massive nubers of these treats by laying them down the length of their arms. Too bad though, because of health department issues they say they can't do this anymore, even though some still will when no one is looking. The alternative is that they lay a stainless steel sheet upon the arm and assemble them on that instead.
