Blackened trout on a bed of mixed greens

Blackened Fish

We didn't have any mustard, cayenne (substituted red pepper), or white pepper (doubled black pepper). Dressing for greens was a basic olive oil and balsamic with a touch of lemon. Served on Fernhill pottery.
