I love this recipe. I added sliced carrots and celery. If you opt to do so, saute both vegetables then proceed with the recipe. I delayed putting the rice in in order to allow the carrots and celery further cooking time. Once both vegetables are done to your liking, add the rice. I also added extra lemon juice and used parsley instead of cilantro. I thought the cilantro would be way too strong for my daughters.
