I just made nine dozen Easy Pumpkin (mini) Muffins for first time tonight for my sons' Halloween parties at school tomorrow, and they are mucho yummy! Even my one kid who doesn't like pumpkin gobbled them up. They are very moist. Sprinkled brown sugar AND orange colored sugar (to give it a festive look) on top before baking. So easy, and another great reason is that there is no egg in the recipe and don't have to worry about classmates' allergies!
