In this delicious recipe I did'nt change anything. I just added a few extras. Half a diced Bell Pepper because Eggplant has a subtle
flavor and a little Pepper adds a twist. I used a Marinara (in the jar). I used 2 different cheeses, on the bottom layer I used Mexican Mozzerella and on the top I used American Shredded Mozzerella. Thats it ! You can see how beautiful it looks, well, it tastes better. I served this as a Vegetable dish but can be used as a main, its very filling. I served white Jasmine Rice and Beer Brats by Johnsonville.
