Yes I know. I'm a sad being for being so excited about a pressure canner & cooker. I've been wanting to pressure can something, in fact anything, since last year. I've heard horror stories of jars busting, glass shrapnel flying everywhere, and tomato sauce flying all over people's kitchens.… MORE

Tons of fun in the sun! Mommy needed a vacation from cooking so my family went to Virginia Beach to go spend some much needed R&R from jamming and the upcoming canning/blanching sessions provided by my garden. Our last vacation was May 2007 to Florida's Cocoa Beach and Disney World so its… MORE

We're coming close to the end of this year's Jamming Obsession. I really out did myself but I'm more confident with canning with a water bath now. RHUBARB STRAWBERRY JAM     HOT PEPPER JELLY (GREEN)   HOT PEPPER JELLY (RED)     CANDY APPLE JELLY GRA MORE

No more pictorials for me people. After the first jamming blog incident, I'll just put pretty pictures of the jamming process. Plus, I'm sure there are more experienced people out there that can can (Get it? Can Can.) much better than me and take pictures of every step during the process withou MORE

I think jamming (or is it jellying?) has become my new obsession. No more pretty new flowers to take pictures of so I have moved on to preserving this year's crops. Before I can do that, I started with Pepper Jelly yesterday and today's new venture is WINE JELLY from Allrecipes.   FIRST, MORE

WE BE JAMMING! I'll admit that I was scared to can anything. I always imagined a can bursting into a million glass shrapnel pieces like in Saving Private Ryan and hurting everyone within a 20 feet vacinity. Yes I know. I lost some marbles when I was in the Army. Anyways,… MORE

Every once in a while, I get a yearning for appetizers. From mozzarellla sticks, potato wedges, chicken strips, buffalo wings, and even raw oysters, I love them all. Last night's Appy Dinner consisted of a weird variety inspired by my last visit to Red Lobster.   The only thing I have… MORE

About Me
Hi. I'm Josephine. I am a 27 year old SAHM, Army Veteran, and Military Wife. In a nutshell, I was born in the Philippines, moved to the States when I was 6, grew up, joined the Army and served as a combat medic, have moved around a lot, met husband, married, and now reside in West Virginia where my husband is stationed. I have 2 children. Josceline (5 years old) and Lindsay (almost 2 years old). I've always worked in the medical field and was going to school for my nursing degree but that has taken the backseat until my younger daughter starts school.
My favorite things to cook
Almost anything but desserts. I believe desserts are evil and is the devil's way of making me fat!
My favorite family cooking traditions
With my kidlets, I like to cook with them. With my family growing up, we had no cooking traditions.
My cooking triumphs
Josceline's 5th Birthday Castle Cake. It was HUGE with homemade towers. Everyone was so amazed that nobody wanted to eat it.
My cooking tragedies
Tons and tons of it. The most memorable was the time I was sanitizing Josceline's baby bottles with boiling water. I fell asleep and woke up to a horrible smell.
