I substituted 3 mashed bananas for the eggs and 1 cup of apple sauce for the oil. I didn't have any chocolate pudding so I substituted banana cream pudding and added 1/2 cup cocoa powder, though 1/4 cup would have worked just fine for a less intense chocolate taste.
