Pumpkin Peanut Soup

This was quite good. I thought it needed a little extra kick, so I added some cayenne pepper, plenty of salt and pepper, and just a hint of curry powder. I also garnished with some steamed red chard, which made it pretty to serve.

Flank Steak Pinwheels

This recipe is awesome! Pounding, piercing, and a long marinating time make this the most savory, tender flank steak I've ever eaten. The filling is delicious, and the pinwheel presentation makes this a great dish for company.

Rollatini with Pork and Rosemary Filling

Although they're not a snap to make, these chicken breasts are a nice change from ordinary chicken breast dishes. I think next time I will try tying them together with kitchen string instead of using toothpicks -- might help them stay together better. All in all, it makes really nice "fancy" chicken dish. Be sure to get them nice and browned on the outside to assure that the inner chicken meat is fully cooked...I had to nuke mine an extra minute after cutting it open to find slightly raw chicken inside.

Almond Lemon Chicken

I thought this dish was very delicious...I've made several lemon chicken recipes before, but never one with orange marmalade and red pepper, which really made everything tastier. I used less olive oil than called for (probably just 2 tablespoons), and skipped the butter altogher. Serve with steamed broccoli and brown or wild rice for a delicious, balanced meal!

Rich and Creamy Roasted Eggplant Soup

Holy smokes, this one's a winner! I made a few changes -- used water instead of chicken broth, added a tablespoon of chopped fresh rosemary, and added a clove of pressed garlic just before serving. I used half and half instead of cream, but it was still deliciously rich. I can't wait to serve this one to company!

Washabinaros Chili

This chili rocks! The wasabi, sausage, and multiple kinds of peppers really add depth of flavor. I always substitute ground beef with 2 cups of texturized vegetable protein (TVP) to make it a little healthier (add 2 extra cups of liquid if you try this). The beer I used was perfect for the recipe, too: Alaskan Brewery's Smoked Porter - they smoke the malt with alderwood before brewing...try it if you can find it. This will be added to my growing arsenal of awesome chili recipes from allrecipes...thanks Aaron! Deee--LISH

Green Curry Tofu

This is a wonderful dish. I especially liked the idea of stir-frying with sesame oil - it really adds depth of flavor. I also added broccoli to the stir-fry, used lite coconut milk, and served over steamed short-grain brown rice. Delicious!

Easy Red Beans and Rice

Jamaican Me Crazy Chili

This chili is really good, although it definitely needed spicing up! I added a minced habanero pepper, which gave it the needed zip. I also used texturized vegetable protein instead of ground beef to get the same texture as meat chili without all the saturated fat. I'll make this one again!

Quinoa Tabbouleh

This is a great recipe, and a nice twist on traditional bulgar tabbouleh. The quinoa gives it a very nice texture, and the addition of shredded carrots gives it some sweetness, which complements the lemony tang. I used half the olive oil to lower the calorie count a little. I'll make this one again!
