Sausage Casserole

Made a half batch of this in a 8inch square pan. I was attracted to the recipe because it is gluten-free. It tasted really good, the egg, cheese, cottage cheese combo was really good and are things I always have on hand. Would have perhaps liked the potatoes to crisp up a bit, so may try what the others did with cooking the potatoes a wee bit first. Made no subs, it was fine, adding only fresh ground salt and pepper. Since it's cheaper and healthier, shredded ingredients myself (maybe added 3 minutes to prep time?) Only took 2 potatoes. On the whole a very economical meal that was enjoyed by the whole family.

Coconut Lentil Soup

Really tasty -- made this as a quick dinner when I had nothing else in the cupboard. Had no ginger - so I sprinkled a little bit of pumpkin pie spice, used chicken broth instead of water for the lentils and used more of it as I had it on too high for the first bit. Instead of soy/coconut blend I used a can of coconut milk. It was great, easy and fast. I liked that it was made from staples I always have on hand.

Irish Bacon And Cabbage Soup

This was very good, quick and easy. Definitely a keeper, I used regular bacon and regular cabbage (didn't notice that it said savoy cabbage). It probably would have been more flavorful with a different cabbage. My husband loved it!

Hamburger Rice Soup

I was trying to avoid going to the store and came across this recipe. It turned out pretty well, considering how many modifications I had to make. Didn't have diced tomatoes, so I sub'd a jar of Garlic Pasta Sauce. Didn't have onions, added a few cloves of garlic. Added a can of corn and used a wild rice blend instead of white rice. I ended up adding a little bit of ketchup at the end because it needed more tomato, would probably have been better to use tomato paste. In the end, it worked, was filling and my son & husband loved it. Love it when you can make something out of nothing!

Pumpkin Upside Down Cake

Thumbs up on my initial test from the family! I did a gluten-free version, using Pamela's Gluten Free Vanilla Cake mix, which was around 21 oz instead of 18. It's a keeper, we'll be making it at Thanksgiving!

Applesauce Cake IV

Just baked this recipe. It baked quickly, done in 30 minutes and did not rise much, however the cake tasted light. Seems like there is a bit too much salt in the recipe.

Delicious Ham and Potato Soup

Didn't have enough hame leftover to make a double batch, really wish I did because we loved this soup. I heeded other's advice and didn't add too much salt. I still felt it needed more salt, but that may be because I used a HoneyBaked Ham which is a little sweeter. We liked it a bunch. Thanks for a great (and easy) recipe.

Barbeque Chicken

I was searching for a recipe to bake chicken that would be moist and this is what I tried. Awesome! It wasn't the traditional thick bbq sauce, but the chicken was falling off the bone, my husband and I both loved it, very flavorful.

Smothered Green Beans

I didn't find this recipe to be too good, the beans were a little soggy. I think next time I would remove the bacon bits after they are crispy and add at the end. Also, only add a little bit of water at a time as needed. I substituted homemade broth for the water but it still lacked flavor.

BBQ Miso Chicken

This recipe surprised me! It was a HUGE hit! Took this with us camping. Boiled the chicken first, then put in a ziploc with the marinade. People loved it. I was worried that it would have a heavy soy taste, but it didn't at all. Now I'm experimenting with different meats. Made a great marinade for tofu as well.
