Salmon Cakes III

This is a good recipe. I always drain the salmon though. You also can use a handful of finely crushed saltine crackers instead of bread in a pinch. Like several other reviewers, I fry these in olive oil as I prefer the flavor. Lastly, I splash them with cider vinegar. Yum!

Fluffy Pancakes

This is a fine pancake mix, but nothing exceptional. The flavor is a little lacking, and I found the batter a little too thick for me. Adding a teaspoon of vanilla and a couple of tablespoons of milk helps.

Chicken Lasagna Alfredo

Definitely do yourself a favor and make a quick homemade alfredo sauce instead of using the jarred stuff. There are a couple of great recipes on here for homemade alfredo. They only take a few extra minutes, but the results are well worth it. I, like several others, used a rotisserie chicken with great results. Nice recipe. It was well received by all who tried it :)

Mexican Style Cornbread

This cornbread is very tasty. My friends all loved it. However, I had to bake it around 50 minutes and it was still pretty mushy in the center, so allow a little extra time or make it in a larger dish than an 8" square. Also, I'm not a big fan of the cheese on top. Next time, I'll just mix it all together. Also, maybe a little less onion might be better.

Double Chocolate Mocha Trifle

Very good recipe, but not exceptional. It was well-received at a pot luck. I substituted 1/4 c. Kahlua for the instant coffee and added caramel ice cream topping between the layers.

Never Fail Applesauce Spice Cake

This cake has great flavor and texture. Very moist and delicious. However, a cream cheese frosting would, in my opinion, be too overwhelming. Instead, I used a simple caramel glaze (1/2 c. butter, 1/2 c. light brown sugar, 1 tbsp. milk or cream; bring to boil over medium heat then glaze cake). Everyone loved this cake with the caramel glaze. In the future, since I omitted the pecan cream cheese frosting, I would add more walnuts to the cake itself.

Steff's Shepherd Pie

Very good basic recipe, but definitely needs some changes to up it to 5 star. I used a can of mixed vegetables rather than just beans, added 2 cloves of minced garlic, some seasoning salt, and cheese on top of the potatoes. I think a half can of diced tomatoes would be a nice addition as well. Oh, and best of all, I made this in an oven safe skillet, so it was a one-dish meal!!!

Chocolate Trifle

I'm sure this would have been good as is, but with changes was GREAT! I took the advice of previous reviewers and used 1 pint of heavy cream, whipped with 5-6 tbsp of sugar and 1 tsp. of vanilla. I also drizzled caramel ice cream topping over the brownie layers and topped the whipped topping layers with toffee bits. Make sure it sits overnight. It is very sweet and rich, so some may prefer it after a light meal only. My GF said it was 10 stars :)

Garlic Chicken Pizza

Surprisingly good recipe! I used refrigerated pizza dough, and because all bottled cream sauces taste thick and artificial to me, I used 1/2 c. of the sauce, 1/4 c. of skim milk, and added 2 cloves of minced garlic and fresh cracked black pepper. I believe this made the pizza far better for me. I also put the chicken under the cheese to prevent it from drying out. Even with these changes, it was missing something for me. I think next time, I will put some spices on the chicken before I cook it.

No Bake Cookies III

These are good, and there are a thousand different ways to make them. I prefer 4 level tbsp. cocoa powder and 1 c. of peanut butter. Definitely don't start counting your minute until it's at a full rolling boil. An old recipe book I have says not to stir during the minute of boiling, so I never do.

Blue Cheese Ball

I was kind of bored with this cheeseball. It is different than other cheeseballs, but the blue cheese was the overwhelming flavor. I prefer something with more depth. Tabasco helped, but overall, it was still pretty blah. Maybe I'm just tired of cheeseball in general.

Cranberry Hootycreeks

These are delicious cookies and a nice change from all the traditional cookies. I have give the jarred mix as gifts, and I have made them for work and friends. They are always well received. **A couple of pointers: either use unsalted butter or omit the salt from the recipe. I might even decrease the salt just a tad. I prefer these cookies to be golden brown around the edges and on top. They taste better when slightly crunchy. In my oven, it takes 13 minutes on 350 to get them perfect. Also, they don't spread very much so you can space them about an inch apart. I highly recommend these cookies :)

Easy Cheese Ball II

This is easy, but so is Hamburger Helper. It tastes very artificial, no freshness whatsoever, and even after sitting overnight in the fridge, it is still way too salty. The flavor combination is very boring. There is too much cheddar cheese. Overall, not good. There are way too many cheese ball recipes out there to try to "fix" this one with adjustments.

Pillsbury Crescents Turkey Cranberry Pinwheels

I really like the idea of it, but the cranberry sauce causes everything to slide around, so you can't really roll it up nicely in order to slice it into pinwheels. What was salvaged was just kind of blah for flavor.

Chicken Meatball Soup

I loved this soup! I used ground turkey rather than chicken for an even lighter meal and skipped the baking of the meatballs. It's unnecessary. You can just drop the meatballs into the boiling soup. I served it over egg noodles. Delicious, flavorful, and comforting.

Thick Chocolate Shake

Very good milkshake. Powered egg whites were $11/can at my local Kroger, plus $3 for the Nesquick, and $3 for the ice cream. That equals a pretty expensive milkshake. I hope I can find something else to do with those egg whites. If you're trying to save money and don't already have the egg whites in your pantry, skip them. I think the shake would be just as tasty.
