Two-Bean and Mango Salad
Delicious! I used frozen mangos (from Trader Joe's), doubled the cilantro and added green onions. I garnished with cherry tomatos. It tasted even better the next day. Thank you for a great recipe!

Apple Brownies
Very easy to make and tastes real good. I added a pinch of nutmeg, made it in cup cake alu foils and baked it for 25 minutes.

Eggplant Tomato Bake
Yummy, yummy, yummy! I sprinkled with a little salt first, then brushed each round with olive oil, one layer of parmesan, tomato, one more layer of parmesan. A definite keeper.
