About this Cook
40, female, married with no kids. Have worked in the restaurant industry over 25 years. Addicted to recipes.
My favorite things to cook
Anything, but if I have to pick a favorite thing to cook it would be soup. I make kick arse soup.
My favorite family cooking traditions
Comfort food. My favorites are soups, chicken dishes, Mexican, cookies, and anything that can be served with a side of my Mom's mashed potatoes. Also, anything spicy.
My cooking triumphs
Having my husband tell me I made something as good as or better than his Mom.
My cooking tragedies
I tried a recipe for stuffed cabbage rolls from Martha Stewart once. She should have gone to jail for publishing that recipe anywhere.

Pesto Chicken
This was just ok for me. Hubby liked it more than I did. It was a good start - but next time I make it I'll definitely be doing some tweaking. Fast and easy - just lacking something...

Pesto Chicken Penne Casserole
I don't even have this in the oven yet and I'm giving it 5 stars. Have you ever seen 'What About Bob'? The scene where he is having dinner with his doctor and the doctor's family - that was me preparing this. SO GOOD. Tweaks - I halved the pesto, used diced tomatoes, omitted the spinach (didn't have any) & seasoned the chicken a bit. I did it all in one pan on the stove top with the exception of the bread crumb mixture, obviously. Poured it in the 9x13 pan, topped with the crumb mixture & popped it in the oven. It smells divine, too. Can't wait to get my eat on. This is not at all healthy - but outstanding. Thank you so much.

Shrimp Lemon Pepper Linguini
not at all impressed. bland (except for the flavor of lemon & chicken broth) and boring. reminded me of avgolemno - and it wasn't soup that I wanted to be reminded of. really expected a lot more from this recipe because of the reviews. apparently this site has a lot of users that are *really* easily pleased.
