My favorite things to cook
I love quick and easy dishes. I love legumes and saucy-stew type dishes. Things with a Caribbean flare always catch my eye too. I am open to any country's cuisine and want my family to explore every fruit, vegetable and to keep their dinners delicious and exciting and yet still have the comfort of Mom's cooking.
My favorite family cooking traditions
My mom loved to cook. Her mom loved to cook. The heart of the home was the kitchen and I love this tradition. Baking, roasting, grilling, stir-frying...you name it, bring it on!
My cooking triumphs
Having a huge dinner party come out successfully with people raving about the dishes. That is a cooking success.
My cooking tragedies
Just this week I was working on my team's soccer line up. I thought I had everything going so well. Burgers on the grill, homemade fries in the oven...but I forgot in the midst or concentrating on my line-up. I burned all the burgers to a crisp!

Tina's Best BBQ Lime Chicken
Excellent taste! I only used a 1/2 cup of olive oil and a 1/2 cup of lime juice from concentrate. The taste went all the way through and every bite was great. I used chicken breasts sliced to about 3 oz each. I served it with Quick Black Beans and Rice from this site as well. It was a great combo!

Easy Garlic Ginger Chicken
This was great, healthy and easy! My kids and husband all liked it. I served it with a side of rice and beans and a tossed salad. The marinade really sets in, in a very short time. I stir fried the chicken breasts in the skillet with olive oil.

Jambalaya
This was excellent! I omitted file powder and the celery. I went easy on the green peppers. Even my kids ate it! I will definitely make this again.
